Sōke's kitchen cooks Vietnamese food alongside the grill and the pot, and pho is the heart of it. The stone pho arrives in a hot stone bowl so the broth keeps bubbling, with oxtail, sliced ribeye, brisket, tendon, flank, beef balls and tripe.

Phở đặc biệt ($18.98) is loaded with sliced ribeye, oxtail, beef feet, brisket, flank, beef balls, tendon and honeycomb tripe. The Vietnamese Pho Pot ($18.98) brings the same beef broth as a single pot with oxtail, beef slices, tendon, tripe and beef balls.
Pho has deep roots here: owner Linh Huynh opened her first Twin Cities pho restaurant in 2008, years before Sōke.
